Paleo Cajun Casserole

Found this tasty and high protein Paleo dinner recipe thanks to Mark’s Daily Apple. If you sign up for his newsletter you get a free recipe book download, and this gem was in it.
We made a few minor modifications to the recipe for our taste, so here it goes.


1 lb smoked or Andouille sausage
1 lb shrimp, uncooked
6 slices bacon
3 medium size yellow or zucchini squash
2 eggs
1 white or yellow onion
1 yellow pepper
5 oz mushrooms
Cajun seasoning to taste

Preheat oven to 375. Chop sausage, bacon, and veggies into small pieces. In large pot on medium heat, begin cooking sausage, bacon, and onion. When bacon is mostly cooked, add squash, mushrooms, and yellow pepper. Turn heat on high, to lightly brown squash. Transfer mixture to 13×9 casserole dish, add both beat eggs,  add shrimp and Cajun seasoning, and stir to coat all ingredients with egg. Shrimp is added last and should be uncooked, otherwise it will overcook in the oven.  Bake for thirty minutes. The above ingredients make a heavy, full 13×9 pan, so there will likely be leftovers unless serving this to a large group.

  1. Sounds delicious! Shrimp is one of my favorite since it does not taste fishy. GO FOR IT! I think I’ll make it myself.
