Paleo/Gluten Free Bread Recipe

The holidays have brought with them the craving for baked goods, so we tried out a paleo bread recipe. I wasn’t sure how this would turn out, fearing it would end up very dense and bland without sugar or flour. But, for a first attempt, it turned out quite nice. View Recipe I used walnut pieces and frozen wild blueberries to add flavor and texture, but I’d like to try bananas in the future, if I can keep some bananas around long enough to get to the soft baking stage. Pumpkin or zucchini would also be a great variation.

Paleo bread ingredients:

2 cups almond meal
1/4 cup walnut pieces
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
4 eggs
2 tbsp honey (optional if you don’t want to add any extra sweetener to keep it truly Paleo)
3 tbsp coconut oil (melted to liquid in microwave)
1/4 cup natural unsweetened applesauce
1/2 cup frozen blueberries
1/4 cup unsweetened almond milk

Preheat oven to 400 degrees. Grease loaf pan with coconut oil or olive oil. Mix all dry ingredients in a mixing bowl first, then stir in remaining ingredients till everything is evenly mixed. Blueberries will turn the mixture bluish purple! Pour into pan and bake for about 30 minutes, or until the top part of the bread is firm. Enjoy!
